Originally listed in 1885 by Vilmorin, Rouge d’Hiver is a very old 1840’s French heirloom. This stunning variety of romaine has long spoon-shaped leaves that start dark green, turn to reddish bronze, and ﬁnish with vibrant burgundy tips. French for “Red of Winter”, this variety is fairly frost tolerant and does well into the cool fall. A more open habit than the romaine you would find at the store, we tend to harvest heads on the smaller side.
