100% pure Alaskan birch syrup is truly a labor of love. For three intense weeks in early spring, Crooked Creek Birch carefully taps the majestic Alaska Birch trees (Betula neoalaskana) to collect the sap. It is then cooked down with 110 gallons of birch sap required to create just one gallon of birch syrup (it only takes 40 gallons of maple). It is worth every drop with the rich, dark, molasses flavor that birch syrup brings.
