Spruce tips are the truest sign of springtime in the north. The bright green tender new growth of the spruce branches are quickly harvested when they first pop out. We usually miss the harvest because it is in the thick of planting season. Luckily, we can get this lovely jam on demand. Known for their earthy citrus flavor, spruce tips are an excellent source of Vitamin C. This jelly is our favorite addition to charcuterie boards and shines especially well on a sliced baguette with brie cheese. Made with low-sugar pectin to let the flavors shine.
