A very old Italian heirloom, Chioggia was named for the small fishing village near Venice. First mentioned by legendary French seedhouse Vilmorin in 1840 and has been grown in the United States since at least 1865. Chioggia is an incredibly unique beet with whimsical alternating red, white, and pink rings like a bull's eye. Leaves are shorter at 10-12" and roots are best harvested smaller at 2-3" wide for extra sweetness. To retain the rings, cook whole and slice just before serving.
