When the ground is just past thaw and the air still feels too cold for most of the garden bounty, Pak Choi kicks us off with the first substantial veggies of the season. Shanghai Green is a gorgeous heirloom variety native to China that can be grown small for tender baby heads at 6" tall and even sooner harvest at 20-30 days. Vase-shaped heads grow upright in tight rosettes and can reach over 12" tall if allowed to get full size in our cool soil. This variety is a particular favorite amongst chefs for its juicy stalks and mild cabbage flavor. The dark green spoon-shaped leaves cook up beautifully in soups or over rice bowls next to your best Sockeye.
