A gorgeous array of deep red, golden yellow, snow white, and pink striped heirloom beets make this delectable root crop look even more enticing. Beets hold their color best when roasted or boiled whole with at least 3" stems still attached. Size will vary by variety but roots will mature within a two week window of each other.
